Wine Vinegars
From Katz Farm in Napa, CA, we offer you two "late harvest" wine vinegars—Zinfandel and Sauvignon Blanc, along with very tart and robust Trio Red Wine vinegar.
The late harvest Zinfandel and Sauvignon Blanc wine vinegars marry a bright and crisp acidity with the sweetness and complexity of wine grapes that have been left on the vine to concentrate the natural sugars.
And the Trio Red Wine vinegar is a blend of Merlot, Zinfandel and Cabernet Sauvignon grapes. The finished vinegar has a lovely garnet color with nuances in the flavor of sweet ripe berries.
The vinegar is almost sherry-like in color and complexity with hints of vanilla from the wood, sweet apricot, fig and pear from the late-harvest grapes…all with a strict backbone of crisp acidity from the vinegar base.

"Peach" and "apricot" describe the deep, rich floral qualities of Katz's Honey Vinegar with hints of honeysuckle and vanilla to balance the pleasant acidity. The flavors can best be expressed as the "honey is dancing on top of the vinegar."

The garnet, port-like color of the Agrodolce gives way to lots of plum and fresh berry overtones and a pleasant, crisp finish.

Trio red wine vinegar, made in the traditional "Orleans Method", blends selected lots of Merlot, Zinfandel and Cabernet Sauvignon. The finished vinegar has a lovely garnet color with nuances in the flavor of sweet ripe berries.
